Editor: Fix InspectorPanel AddComponent popup crash

- Remove SeparatorText which causes PopStyleVar mismatch in ImGui
- Add stderr redirection for better error capture
- Add debug logging to InspectorPanel
- Fix EditorLayer commented out undefined functions
